Our talented head chef, Noel Breaks, creates bespoke wedding menus that pair our homegrown ingredients with locally sourced fresh meats and produce, resulting in an unforgettable culinary experience tailored just for you.

From our elegant Chinese Room, with its listed hand-painted Chinoiserie wallpaper and plush teal couches, to our grand State Dining Room with its wonderful views, the castle is yours to fully explore in advance of your big day.

Head chef

Noel Break's culinary journey began in Bradford where he attended day release classes at the 'Hotel Training Company'. He then landed his first kitchen job at 'Holdsworth House' in Halifax, where he rotated between different sections every six months to sharpen his cooking skills.

His passion for cooking led him to the 'Isle of Eriska', a prestigious 4 Red Star hotel renowned for its 3 AA rosettes. Here, he started as a Chef de Partie in the challenging kitchen. Under the guidance of a strict Head Chef, Noel was encouraged to be creative and experiment with new dishes while maintaining the highest standards of quality.

Noel is committed to the "field to fork" philosophy and designs our wedding menus to showcase the best of the season's bountiful produce. When he's not out foraging for fresh herbs and leaves, Noel thoughtfully sources meat and fish from local farmers and producers. As Rose Castle expands, our horticultural yields will grow, meaning our guests can enjoy even more of the same fresh produce that has been enjoyed by bishops for centuries.
